The Beet Goes On!

As if creating holiday feasts to share with family and friends isn't stressful enough, we are now faced with creating menus that can accommodate our friends and family who are burdened with dietary restrictions. No dairy, no gluten, no sugar! Does it make you want to go screaming toward the woods? Before you do that, know that if you've been the hostess with the mostest in your world, you're not alone. And there is hope! You can still create a beautiful traditional holiday meal, and make ALL of your guests feel as though you created it just for them. Now, I'm not claiming that we're going to change the world here, but I've been looking for just one new dish to add to my menu that we can all enjoy, and I've discovered the transformative power of BEETS! Yes, beets! I know it can be an acquired taste. I used to think they tasted a bit like dirt. And, they do have an earthy quality to them, but WOW, these beautiful bulb like roots can transform into an amazing variety of delicious, nutritious, colorful, & healthy dishes.
